Street food energy,

Two things make Thai food taste like Thailand. The heat and speed of a Bangkok street wok, and the patience of a home kitchen that has made the same curry paste a thousand times. Most restaurants pick one. We are stubborn about doing both.

Everything is cooked to order. Nothing sits under a lamp waiting for you. That is slower on a busy Friday, and it is the entire point, because a pad thai that waited is just noodles.

Holy basil, chilli and garlic, wok-fired hard and tipped straight over rice. The dish Thais actually eat on a weekday, and the one our regulars order without looking at the menu.

The same basil stir-fry, built on oyster mushrooms instead. Fragrant Thai basil, fresh chilli, savoury sauce. It does not taste like a compromise.
